Food and Beverage Commercials: The Art of Making You Hungry

The burger on the McDonald's menu board does not exist. It has never existed. The beef patty was seared on the outside and left nearly raw inside to preserve its height. The cheese was melted with a heat gun to exactly the right degree. The lettuce was hand-selected, misted with water, and placed with tweezers. The condiments were applied with a syringe. Hidden toothpicks hold the whole construction together. Somewhere between 30 and 50 burgers were prepared before the food stylist deemed one good enough to put in front of a camera.
None of this is deception. It is craft. And it is why food and beverage advertising is the most technically demanding subspecialty in all of commercial directing.
A Different Kind of Director
Most commercial directors manage performance. They work with actors, coax the right expression out of a real person, manage the energy on set. A food and beverage director manages physics.
The subject is ephemeral by nature. Food melts under studio lights. Lettuce wilts within minutes. Ice cream degrades in seconds. Carbonation escapes. Steam disappears. The director has one job: capture the perfect version of this thing before nature takes it back.
That is why the tabletop director is its own subspecialty. Not a general-purpose director who happens to do food work. A specialist whose entire toolkit, every camera system, every lighting technique, every scheduling instinct, is built around the fundamental problem of photographing perishable subjects at extreme precision.
The relationship to general commercial directing is what microsurgery is to surgery. Same field. Entirely different instruments, scale, and temperament.
The Hero/Swap Hierarchy
Every food shoot operates on a rigid chain of command for the product itself.
Stand-in food serves the crew during setup. It is a reasonable approximation of the hero, used while the DP is setting lights and the director is framing. Nobody uses the hero food for lighting rehearsals. You burn through stand-ins.
Hero food is the single, perfect specimen that will appear in the final shot. Handled only with tweezers. Never with bare hands. Placed on set only when cameras are loaded, lights are locked, and everything else is ready. For a hero burger, the food stylist typically prepares 30 to 50 versions before selecting one. That is not waste. That is the standard.
Swap food is the waiting line. Multiple hero-quality specimens held in reserve so that when the current one degrades, a fresh version is ready. A well-organized food styling team swaps a hero burger in under two minutes. On complex setups, resets take longer, and the math becomes brutal: a 12-hour day has a finite number of 20-minute reset cycles. Every second counts.
The grocery bill alone for a major food commercial runs $1,000 to $3,000 per shoot day. The food stylist shops at multiple stores, inspecting individual tomatoes, individual leaves of lettuce, individual strawberries. That expense is a line item on the production budget, and it is earned.
What a Food Stylist Actually Does
The food stylist is, without qualification, the single most important collaborator on a food shoot. The director conceives the shot. The DP lights it. The camera captures it. But none of it matters if the food does not look impossibly, almost unnaturally perfect. That is the stylist's job.
The kit they bring to set would look at home in a combination of a professional kitchen, a surgical suite, and a hardware store:
Blowtorch for precise browning. Toast the bun to an exact golden color. Create grill marks on steak without actually cooking it, because cooking it would shrink it.
Glycerin mixed 50/50 with water, sprayed onto glass bottles and cans to simulate condensation that holds its shape for hours under studio lights. Real condensation evaporates. Glycerin does not.
Motor oil as a stand-in for maple syrup on pancakes. Real syrup soaks into pancakes within seconds. Motor oil sits on the surface indefinitely, maintaining its glossy, pooled appearance. This is legal and standard, as long as the advertised product, meaning the syrup brand being sold, is the real thing in every shot where it appears.
Microwaved cotton balls and tampons soaked in water, microwaved 30 seconds, hidden behind food to produce visible steam for two to three minutes. Real steam from genuinely hot food is often invisible on camera. Manufactured steam is not.
Shoe polish to deepen the color of grill marks. Red lipstick to restore the saturated red on strawberries. White glue instead of milk in cereal shots, because real milk turns cereal soggy within seconds. Hot glue to create cheese pulls that hold their stretch indefinitely.
The FTC Rules (and Why They Matter)
The FTC's rule is simple: the advertised product must be shown as it actually is.
Non-food substitutes are legal for food items that are not the product being sold. Motor oil can stand in for the pancakes' syrup only when the syrup brand is something else entirely. The moment a syrup brand is what you are selling, that syrup must be real in every shot featuring it.
The standard is whether the ad can "reasonably be interpreted in a misleading way." Nestle's Carnation Coffee Mate ran into enforcement action when the ad showed a half-cup serving size used over cereal and fruit. At that quantity, the product had 8.5 grams of fat, nearly twice the fat of whole milk. The FTC found that misleading under the low-fat standard the ad implied.
Legal representatives from the brand and agency are often on set during food shoots specifically to manage this. The director's job includes knowing which shots require the genuine article and which can use substitutes.
The Pour Shot
The pour shot is where food and beverage advertising earns its reputation for expense.
At the national brand level, a single pour shot can cost $50,000 or more when you account for everything that goes into it: the Phantom high-speed camera rental, the Bolt motion control robot, the tabletop setup day, the food stylist prep, the DP's time, the director's fee, the data management workflow, and the 20 to 50 takes required before one is worth using.
That cost exists because the physics involved are genuinely difficult to control.
Viscosity determines how the liquid moves. Water is thin and splashy. Beer is slightly thicker with a tendency to foam. Honey is slow and ropy. Each behaves differently at different temperatures, giving the director a control variable: adjust temperature, change behavior.
Pour height determines the drama of impact. Short pours are elegant. High pours are violent and produce more splash. The director chooses.
The head on a beer pour must be exactly right. Too much foam looks over-carbonated and sloppy. Too little looks flat and lifeless. The glass is pre-chilled. The beer is held at a tested temperature. The pour angle is rehearsed. Glycerin condensation is applied before the pour begins. Then the camera rolls, the Bolt executes the same arc it has executed 40 times before, and the result is either the shot or another reset.
A perfect beer pour might require 20 to 50 takes. Each one means a fresh glass, fresh beer cracked just before the pour for maximum carbonation, and a fresh condensation application.
The Phantom Camera
The Phantom camera, made by Vision Research, is the tool that makes food advertising possible at high speed.
The Phantom Flex4K shoots 4K at up to 1,000 frames per second. At 1,000 fps, a two-second pour becomes 83 seconds of footage at playback. Every droplet is visible. Every bubble is individual. The cream swirling into a black cup of coffee, the milk crown splash when a cookie hits the surface, the carbonation burst when soda hits ice: all of it is invisible in real time and spectacular in slow motion.
The trade-off is light. At 1,000 fps, each frame is exposed for 1/1,000th of a second or faster. The set must be intensely illuminated just to achieve a workable exposure. Standard tungsten and fluorescent sources flicker at high frame rates because their output oscillates with electrical frequency. High-speed LED panels or HMI fixtures are required.
Data rates are also staggering. The Flex4K at 1,000 fps generates roughly four gigabytes of data per second. A 10-second take produces 40 gigabytes of raw data. Productions need high-speed storage, multiple backup drives, and a dedicated data wrangler whose entire job is managing that flow.
The Bolt motion control robot from MRMC handles camera movement at matching speed. It is a high-speed cinebot that can move a camera faster than any human, executing the same arc within fractions of a millimeter across every take. This repeatability is what makes compositing possible: take 37 has the best-looking burger, take 52 has the best pour, take 41 has the best splash. Because the camera moved identically in every take, those elements can be combined in post without misalignment.
Lighting Food
Backlighting is the most powerful tool in food advertising, specifically for liquids.
When light passes through a translucent liquid, the liquid glows with its natural color. The golden radiance of a backlit beer. The ruby luminescence of red wine. The amber warmth of whiskey. That glow is not inherent in the liquid. It requires a light source positioned behind the glass, allowing light to transmit through the liquid rather than reflect off its surface.
Side light, positioned roughly 90 degrees from the camera, does something different: it rakes across surfaces and reveals texture. Every ridge in a bread crust, every grill mark on a steak, every flake in a croissant becomes dramatic and visible under raking side light.
Steam requires backlighting to be visible on camera at all. Real steam is clear. What registers on camera as steam is condensed water vapor, and it needs a strong backlight to glow against a darker foreground. Without backlighting, food that is genuinely steaming hot does not look it.
LED panels have become dominant in food lighting for a simple reason: heat. LEDs produce far less of it than tungsten fixtures, which means ice cream stays frozen slightly longer, chocolate stays tempered slightly longer, and the food stylist has slightly more time to get the shot.
The Directors Who Built This Category
Charlie Stebbings is the director most credited with changing how food advertising looks. His work on the Marks and Spencer "This is not just food, this is M&S food" campaign in the UK replaced bright, informational food advertising with slow-motion, macro-level, cinematic presentation. Before M&S, food commercials tended to be flat and fast. After M&S, the entire industry shifted toward drama, texture, and sensory immersion.
Steve Giralt runs The Garage in Brooklyn and calls himself a "visual engineer," which is accurate. His setup combines the MRMC Bolt with custom-built catapults, release mechanisms, and conveyors he designs himself. His 2016 burger drop video, showing a burger assembled in mid-air by robotic precision and captured by a Phantom Flex4K, hit the top of Reddit and was so precise that viewers assumed it was CG. It was entirely practical. Clients have included Doritos, Hershey, and 7-Eleven.
Timothy Hogan spent 25 years as both a tabletop director and advertising photographer in Los Angeles, a dual background that gives him uncommon precision with composition and lighting. His Beer Pour Study demonstrates command of every variable in a single shot: stream definition, head height, condensation, clarity, and the exact moment to trigger the camera.
Etienne Proulx began as a prop master for feature films and built toward liquid specialization over 30 years. He has spent the last 15 years focused almost exclusively on shooting and styling liquids and beer. That depth of specialization, 15 years on one type of shot, is what the top of this category looks like.
Avi Karpick has worked globally for over 25 years on food and tabletop advertising across every category: chocolate, fruit, meat, dairy, baked goods, beer, soda. His range makes him one of the most consistently booked directors in the specialty.

The Budget Reality
National QSR spots like McDonald's and Burger King run $300,000 to $800,000 for a standard 30-second broadcast commercial. Super Bowl and tentpole campaigns clear $1 million in production costs before the media buy.
Beer advertising at the Anheuser-Busch level runs $400,000 to $1.5 million per spot. Coca-Cola's major campaigns range from $500,000 to $2 million or more. Complex tabletop-only productions involving motion control, Phantom cameras, and elaborate food styling typically cost $150,000 to $500,000 for the shoot alone, before post.
The most elaborate tabletop productions, with multiple robotic rigs and weeks of pre-production testing, can exceed $500,000 without breaking a sweat.
Post-production adds another significant layer. CG enhancement of steam, moisture, color, and food imperfection removal is standard practice across the industry. CG liquid effects start at $5,000 per shot at the low end. Compositing elements from multiple takes, which is almost universal in tabletop work, requires motion control data, clean plates, and frame-accurate tracking.
What Makes This Category Different
Most commercial production involves controlling variables you can prepare for. Tabletop food production involves controlling variables that actively resist you.
The food degrades while you are watching it. The physics of a liquid pour produce results you cannot fully predict until the camera is rolling. A millimeter of difference in glass angle changes the character of the head on a beer pour. A degree of temperature difference changes how chocolate flows. The right splash pattern requires not just the right pour but the right pour at the right millisecond relative to a camera moving at precise speed along a programmed path.
This is why specialists exist. Not because a generalist could not learn the techniques, but because the techniques are a full career's worth of work. Charlie Stebbings spent his career making food look delectable. Etienne Proulx spent 15 years on beer pours specifically. Expertise at this level is not accumulated quickly.
The result, when it is done correctly, is something that operates below conscious awareness. The viewer does not see the 50 burgers, the heat gun, the glycerin, the Bolt robot, or the 40 takes. They see a burger that looks better than any burger they have ever eaten. And they want it.
That gap between what was made and what was felt is where this work lives.
